We love Italian food but I’ll be honest. I’ve never heard of or thought of making a frittata with spaghetti, linguini or any other kinds of pasta. When Ali and I first saw Frittata Di Spaghetti, a spaghetti frittata in Naples, it was like a light bulb went on for both of us at the same time. We knew immediately that this was something we would love and will be an addition to our menu even before tasting one.
We, wholeheartedly, side with the Neapolitan on this and think that making frittata out of leftover pasta is a brilliant idea though, we heard, Italians from other regions make fun of this gem saying the poor Neapolitan can’t have enough pasta that they have to make an omelette/frittata out of it.
Pasta frittata can be served hot, in room temperature or cold making it a perfect food for picnics, cookouts or brunches. Before it gets too hot down here in Texas, we are having as much outdoor meals as we can and had a fabulous family picnic where the start was this frittata.
Any shape of pasta can be used to make a this frittata, regardless of whether it was cooked with sauce, vegetables, meat or any other ingredients. You can use leftover pasta but boiling some just for the frittata will also be well worth.

- 4 oz spaghetti, cooked
- 4 large eggs
- 1 cup eggplant, chopped
- ½cup sun dried tomato, chopped
- 4 oz mozzarella, shredded
- ½ cup basil, chopped
- 1 garlic clove
- Salt, according to taste
- Black pepper, according to taste
- 4 tablespoon olive oil
- Set water to boil and cook pasta. Drain the water through a sieve.
- In a nonstick frying pan, heat 2 tablespoon oil.
- Add garlic, and eggplant and sauté until eggplants are semi soft. Set aside.
- In a large bowl, beat eggs. Season with salt and pepper.
- Add basil, spaghetti and mix well.
- In the same nonstick pan, heat the remaining oil over medium heat and swirl around to coat the pan.
- Add half the pasta and spread evenly in the pan.
- Layer in shredded cheese, chopped sun-dried tomato, eggplant.
- Cover cheese, tomato, and eggplant with remaining pasta.
- Cook over low-medium heat for 5 - 8 minutes, or until a crust forms at the bottom of the frittata.
- Turn the frittata by gripping the handle of the pan with one hand and placing a plate on top and by flipping the pan on to the plate.
- Slide the frittata back into the pan from the plate and cook the other side for another 5 - 8 minutes, until it browns.
The frittata can also be broiled for 5-8 minutes after the flip.
Linguini, macaroni or any other shaped pasta can be used in place of spaghetti.
You may use left over pasta with or without sauce for the frittata.
Parsley will also be great in place of basil.
Be cautious when flipping the frittata to avoid burns.
উপকরন:
৪ আউন্স স্পাগেটি
৪ টি বড় ডিম
১ কাপ বেগুন, কুচি করে কাটা
১ কাপ টমেটো, কুচি করে কাটা
৪ আউন্স মোজারেলা চিজ
১/২ কাপ বেসিল পাতা, কাটা
১ কোয়া রসুন
লবণ, স্বাদ অনুযায়ী
গোল মরিচ, স্বাদ অনুযায়ী
৪ টেবিল চামচ তেল
প্রণালী:
১. ফোটানো পানিতে স্পাগেটি সেদ্ধ করে পানি ঝড়িয়ে ফেলুন।
২. একটি ননস্টিক ফ্রাইং প্যােন টেবিল চামচ তেল গরম করুন।
৩. রসুন, টমেটো ও বেগুন যোগ করে বেগুন আধা নরম হওয়া পর্যন্ত রান্না করুন।
৪. একটি বড় বাটি মধ্যে ডিম, লবণ এবং গোল মরিচ একসাথে ফেটে নিন।
৫. বেসিল, স্পাঘেটি যোগ করুন এবং ভালভাবে মিশান।
৬. একই ননস্টিক ফ্রাইং প্যােন, মাঝারি তাপ বাকি তেল গরম করুন।
৭. অর্ধেক পাস্তা প্যােন সমানভাবে ছড়িয়ে দিন।
৮. চিজ, টমেটো-বেগুন মিশ্রণ পাস্তার উপর ছড়িয়ে দিন।
৯. অবশিষ্ট স্পাঘেটি দিয়ে পনির এবং টমেটো-বেগুন মিশ্রণ ঢেকে দিন।
১০. ৫-৮ মিনিট বা প্যােনর নিচে ডিম জমে না উঠা পর্যন্ত কম মাঝারি তােপ রান্না করুন।
১১. এক হাতে প্যােনর হ্যান্ডেল ধরে অন্য হাতে প্যােনর উপরে একটি প্লেট স্থাপন করে ওমলেট উল্টে নিন।
১২. প্লেট থেকে ওমলেট স্লাইড করে আবার ৫-৮ মিনিটের জন্য অন্য দিকে রান্না করুন।
